The Enologist Course provides a straightforward, practical guide to making clean, stable, aromatic white wines from cool climates, from harvest right through to bottling. You will learn exact harvest goals, how to receive and press the grapes, clarify the must, plan fermentation, decide on malolactic fermentation, handle lees, stabilise the wine, control bottling, and prevent risks, so you can reliably produce top-quality wines that stay good on the shelf and have great taste.
