What will I learn?
You will learn how cacao variety, fermentation, and roasting decisions shape the flavour of every batch you produce. The course walks you through grinding and conching, chocolate recipe formulation for dark, milk, and white chocolate, and the science of cocoa butter crystallisation. You will practise ganache emulsification, caramel cooking, praline production, and shell moulding for filled confections. Sensory evaluation, food safety protocols, ingredient costing, and production scaling are also covered in full. By the end, you will have the technical knowledge and hands-on skills to produce consistent, high-quality chocolate from bean to finished product.
