What will I learn?

This course provides hands-on skills for managing cool-climate Chardonnay and Pinot Noir winemaking from crush through to bottling. You'll cover yeast and nutrient selection, temperature management, cap handling, oak and vessel choices, malolactic fermentation and sulfite strategies, oxygen control, sanitation protocols, risk mitigation, lab analysis, blending techniques, and detailed recordkeeping to produce consistent, clean, stable, fruit-forward wines.
